Zucchini Banana Bread

Obviously I found Zucchini for super cheap and wanted to use it before it went bad. Here is another recipe for Zucchini, but this time with bananas. I made bread with this post, haven't tried it but it smells really good!

Zucchini Banana Bread

Ingredients

  • 3 eggs
  • 3/4 cup vegetable oil
  • 2/3 cup packed brown sugar
  • 1 cup white sugar
  • 1 cup grated zucchini
  • 2 bananas, mashed
  • 2 teaspoons vanilla extract
  • 3 1/2 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts

Directions

  1. Preheat oven to 325 degrees F (165 degrees C). Grease and flour two 8x4 inch bread loaf pans.
  2. In a large bowl, beat eggs until light yellow and frothy. Add oil, brown sugar, white sugar, grated zucchini, bananas, and vanilla; blend together until well combined. Stir in the flour, cinnamon, baking powder, baking soda, and salt. Mix in the cranberries and nuts. Divide the batter evenly between the two prepared loaf pans.
  3. Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 50 minutes. Allow to cool in the loaf pans on a wire rack before removing and serving.

I did not use cranberries or walnuts. Not my cup of tea, but it might be yours...

Zucchini Apple Muffins

So I found these on this website (thank you pinterest) and tried them last week. They are delicious! The apples add just enough flavor! Who knew the two would make a great combo!

Ingredients for Zucchini Apple Muffins
  • 2 C grated zucchini
  • 2 C diced granny smith apples
  • 3 large eggs
  • 1 C light oil
  • 2 1/2 C sugar
  • 3 C all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 1 tsp fine salt
  • 3 tsp ground cinnamon
  • 3 tsp vanilla extract (or 1 tsp of vanilla grounds)
Instructions for Zucchini Apple Muffins
  1. Preheat oven to 350°, and grease muffin pan with butter/flour, or non-stick spray. Set aside.
  2. In bowl 1, whisk eggs, oil, vanilla and sugar to combine, and then add zucchini.
  3. In bowl 2, sift all dry ingredients (baking powder/soda, flour, cinnamon, and salt).
  4. In bowl 3, toss diced apple pieces in some flour. (This will prevent the pieces from sinking to the bottom of your muffins.)
  5. Add bowl 2 to bowl 1, and stir gently. Do not over-mix.
  6. Lastly, toss in the apple pieces from bowl 3, and gently fold to combine.
  7. Dish into muffin cups, and (this next part is completely optional) sprinkle tops with raw sugar, for a nice sugary crunchy top.
  8. Bake at 350 for 20-25 or until toothpick comes out clean.
