Zucchini Banana Bread

Obviously I found Zucchini for super cheap and wanted to use it before it went bad. Here is another recipe for Zucchini, but this time with bananas. I made bread with this post, haven't tried it but it smells really good!

Zucchini Banana Bread

Ingredients

  • 3 eggs
  • 3/4 cup vegetable oil
  • 2/3 cup packed brown sugar
  • 1 cup white sugar
  • 1 cup grated zucchini
  • 2 bananas, mashed
  • 2 teaspoons vanilla extract
  • 3 1/2 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts

Directions

  1. Preheat oven to 325 degrees F (165 degrees C). Grease and flour two 8x4 inch bread loaf pans.
  2. In a large bowl, beat eggs until light yellow and frothy. Add oil, brown sugar, white sugar, grated zucchini, bananas, and vanilla; blend together until well combined. Stir in the flour, cinnamon, baking powder, baking soda, and salt. Mix in the cranberries and nuts. Divide the batter evenly between the two prepared loaf pans.
  3. Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 50 minutes. Allow to cool in the loaf pans on a wire rack before removing and serving.

I did not use cranberries or walnuts. Not my cup of tea, but it might be yours...

Zucchini Apple Muffins

So I found these on this website (thank you pinterest) and tried them last week. They are delicious! The apples add just enough flavor! Who knew the two would make a great combo!

Ingredients for Zucchini Apple Muffins
  • 2 C grated zucchini
  • 2 C diced granny smith apples
  • 3 large eggs
  • 1 C light oil
  • 2 1/2 C sugar
  • 3 C all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 1 tsp fine salt
  • 3 tsp ground cinnamon
  • 3 tsp vanilla extract (or 1 tsp of vanilla grounds)
Instructions for Zucchini Apple Muffins
  1. Preheat oven to 350°, and grease muffin pan with butter/flour, or non-stick spray. Set aside.
  2. In bowl 1, whisk eggs, oil, vanilla and sugar to combine, and then add zucchini.
  3. In bowl 2, sift all dry ingredients (baking powder/soda, flour, cinnamon, and salt).
  4. In bowl 3, toss diced apple pieces in some flour. (This will prevent the pieces from sinking to the bottom of your muffins.)
  5. Add bowl 2 to bowl 1, and stir gently. Do not over-mix.
  6. Lastly, toss in the apple pieces from bowl 3, and gently fold to combine.
  7. Dish into muffin cups, and (this next part is completely optional) sprinkle tops with raw sugar, for a nice sugary crunchy top.
  8. Bake at 350 for 20-25 or until toothpick comes out clean.

Garlic Chicken

This is a yummy dinner recipe that is super easy! I found it online, and it is one of the few recipes my husband requests often! I love it when something turns out amazing! (And it almost falls into the only 4 ingredients category!)

Garlic Chicken

Ingredients:
  • 2 teaspoons crushed garlic
  • 1/4 cup olive oil
  • 1/4 cup dry bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 4 skinless, boneless chicken breast halves

Directions:
  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Warm the garlic and olive oil to blend the flavors. In a separate dish, combine the bread crumbs and Parmesan cheese. Dip the chicken breasts in the olive oil and garlic mixture, then into the bread crumb mixture. Place in a shallow baking dish.
  3. Bake in the preheated oven for 30 to 35 minutes, until no longer pink and juices run clear

I usually double the recipe to have left overs for lunch. So yummy and so simple!

Chocolate Eclair Cake

A friend of mine loves recipes that have 4 ingredients or less. Here is one of my favorite desserts that also happens to fit into that category.

You will need:
1 box graham crackers
2 small packages instant vanilla pudding
4 cups milk
1 8 oz cool whip
1 jar chocolate frosting

(so maybe there are 5 ingredients).

Step 1: mix the pudding with 4 cups of milk and refrigerate for 5 to 10 minutes, or until pudding sets up

Step 2: fold cool whip into the vanilla pudding

Step 3: layer 9x13 pan with graham crackers, cover graham crackers with 1/2 of pudding mixture, place another layer of graham crackers on top of pudding, pour the rest the pudding mixture on top, last layer of graham crackers on top of that, and finish with spreading the frosting over the graham crackers

Step 4: refrigerate for 2 hours before eating
